Best Pizza in Corona, CA: Inside Fat Lip’s Scratch-Made Crust

Oct 26, 2026 · 5 min read · Fat Lip Pizza & Beer

What Makes the Best Pizza in Corona, CA? Crust, Sauce & a Little Hot Honey

Three-day fermented dough. Scratch-made sauce. House-made sausage. A stone-deck oven. And a little attitude.

Everybody in Corona has an opinion about who makes the best pizza. Your coworker. Your neighbor. That one guy at the gym who swears by a place he won’t name.

We’re not here to settle the argument. We’re here to make a pretty convincing case for ourselves.

At Fat Lip Pizza & Beer in Corona, California, we believe great pizza starts long before it goes into the oven. Three days before, actually. That’s how long we give our dough to develop the flavor and texture that make a proper New York-style pizza worth eating.

Add scratch-made sauce, house-made Italian sausage, our signature habanero hot honey, and a cold craft beer, and you’ve got our idea of a good time.

Nothing fancy. Just a lot of work disguised as a slice of pizza.

What Makes a Great New York-Style Pizza?

There’s a difference between pizza that’s good enough and pizza you think about the next morning.

For us, it starts with the crust.

A proper New York-style pizza needs a thin, crisp bottom, enough structure to pick up a slice without everything sliding into your lap, and a beautiful, airy outer crust that actually tastes like something.

Then comes the sauce. It should taste like tomatoes, not candy. The cheese should melt into the pizza, not sit on top like a rubber blanket. And the toppings? They should make the pizza better, not bury it.

It sounds simple. That’s because good pizza is simple.

Making it consistently is the hard part.

Three Days of Dough. About Three Minutes to Eat It.

Our dough goes through a three-day cold fermentation process.

That means roughly 72 hours of resting and developing before it ever sees the inside of our stone-deck oven.

Why bother?

Because time does things to dough that shortcuts can’t.

Slow fermentation develops flavor, improves the dough’s structure, and helps create that combination we’re after: a crisp bottom, a tender interior, and a light, airy cornicione—that beautiful raised crust around the outside of the pie.

We could make dough faster.

We don’t want to.

Good pizza takes time. Eating it shouldn’t.

Scratch-Made Sauce and House-Made Italian Sausage

We’re big believers in doing things the hard way when the hard way tastes better.

Our pizza sauce is made from scratch. So is our Italian sausage.

Making sausage in-house means we get to control the seasoning, the fennel, the balance of fat, and the little details that turn a topping into something worth talking about.

The same goes for our sauce. We want bright tomato flavor that complements the dough and cheese instead of overpowering everything.

None of this is particularly glamorous. It’s just cooking.

And cooking is kind of the point.

Meet Our Habanero Hot Honey

Every pizza shop needs a little trouble.

Ours comes in the form of habanero hot honey.

Sweet at first, followed by a little heat that sneaks up on you, it’s become one of the flavors people associate with Fat Lip.

Drizzled over pepperoni or house-made sausage, it brings together everything we love about pizza: salty, savory, spicy, sweet, and just messy enough to require another napkin.

Is hot honey on pizza a little excessive?

Probably.

Are we going to stop making it?

Absolutely not.

Why We Still Bake Pizza on Stone

There are easier ways to make pizza. Conveyor ovens, automated systems, and all sorts of equipment designed to make the process faster and more predictable.

We use a stone-deck oven.

The hot stone transfers heat directly into the bottom of the dough, helping create a crisp, beautifully browned crust while the toppings cook above it.

It’s an old-school approach, and it requires attention. Every pie needs to be watched, turned, and baked properly.

That’s fine with us.

We’re not trying to manufacture identical circles of food.

We’re trying to make great pizza.

What Should You Order at Fat Lip Pizza & Beer?

If it’s your first time visiting us in Corona, here’s our advice.

Start with a classic pepperoni pizza. It’s the easiest way to judge a pizza shop because there’s nowhere to hide. Dough, sauce, cheese, pepperoni. That’s the test.

Then try something with our house-made Italian sausage or signature habanero hot honey.

If you’re coming with friends, order a couple of different pies and put them in the middle of the table. That’s how pizza is supposed to be eaten.

And if you’re just passing through or looking for a quick lunch, grab a slice.

Sometimes one slice turns into two.

We’re not here to judge.

Great Pizza Deserves a Cold Beer

We’re called Fat Lip Pizza & Beer for a reason.

Alongside the pizza, we’ve got a 20-tap self-serve beer wall featuring a rotating selection of beverages, including local craft beers.

A crisp lager with pepperoni? Beautiful.

Something hoppy with our habanero hot honey? Also beautiful.

There’s no complicated philosophy here. Good pizza, cold beer, a few friends, and nowhere you need to be for the next hour.

That’s a pretty good evening in our book.

Looking for the Best Pizza in Corona? Come Decide for Yourself.

We’re not going to tell you we’re the best pizza in Corona.

That would be obnoxious.

Besides, that’s your job to decide.

What we will tell you is that we put three days into our dough, make our sauce and sausage from scratch, bake our pies on stone, and care a ridiculous amount about the food that comes out of our kitchen.

We started Fat Lip because we love pizza. Not the idea of pizza. Not the business of pizza.

The actual pizza.

The crust. The sauce. The cheese. The whole beautiful, messy thing.

And we think that comes through in every pie.

Come Hungry. Leave Happy.
