Hot Pizza, Cold Beer: The Fat Lip Guide to Pizza & Craft Beer Pairings

Good pizza deserves good beer. And sometimes the best pairing is the one nobody saw coming.

Hot pizza. Cold beer.

It’s not exactly a revolutionary concept. But around here, we take both pretty seriously.

At Fat Lip Pizza & Beer in Corona, California, we make our pizza with three-day cold-fermented dough, scratch-made sauce, house-made Italian sausage, and a stone-deck oven. Then we serve it alongside a rotating selection of craft beers from our 20-tap self-serve beer wall.

The idea is simple: great pizza, great beer, good company.

But here’s where things get interesting.

Not every beer works with every pizza. Some combinations are beautiful. Others make you wonder what went wrong with your taste buds.

We’ve got a few opinions about that.

Naturally.

Why Pizza and Craft Beer Work So Well Together

Pizza is rich. Cheese, tomato sauce, olive oil, pepperoni, sausage, and a beautifully browned crust all bring something different to the table.

Beer has its own personality. Some are crisp and refreshing. Others are bitter, fruity, malty, or dark and roasty.

The trick is finding a beer that either complements the pizza or cuts through its richness.

A cold lager refreshes your palate after a cheesy bite. A hoppy IPA can stand up to bold toppings. A malty amber ale brings out the toasted flavors of a stone-deck crust.

You don’t need to know everything about beer to find a great pairing.

You just need to be willing to experiment.

Preferably with pizza involved.

1. Pepperoni Pizza + a Crisp Pilsner or Lager

Let’s start with the classics.

A proper pepperoni pizza has a little bit of everything: salty pepperoni, rich melted cheese, bright tomato sauce, and a crisp, chewy crust.

It’s also one of the best ways to judge a pizza shop.

Our New York-style pizza starts with dough that’s cold-fermented for three days before being baked on stone. That gives the crust time to develop flavor and the structure to hold up to the toppings.

Pair it with a cold pilsner or lager.

The crisp carbonation helps refresh your palate between bites, while the beer’s relatively clean flavor lets the pepperoni and sauce do their thing.

No complicated tasting notes required.

Just pizza and beer doing exactly what they’re supposed to do.

The pairing: Pepperoni pizza + pilsner or crisp lager.

2. Habanero Hot Honey Pizza + a Refreshing Lager

Now things get a little more interesting.

Our signature habanero hot honey brings sweetness, heat, and just enough trouble to make an ordinary slice feel like a party.

Drizzle it over pepperoni or house-made Italian sausage and you’ve got a combination of salty, savory, sweet, and spicy.

A crisp lager is one of our favorite ways to balance it.

The carbonation refreshes your mouth, and the clean finish keeps the sweetness from becoming overwhelming.

One thing worth knowing: alcohol and hop bitterness can sometimes make chili heat feel more intense. So if you’re looking to tame the habanero, a lighter, less bitter beer is usually a better starting point than a big double IPA.

Although if you’re the kind of person who likes a little punishment with dinner, we respect that too.

The pairing: Habanero hot honey pizza + light lager or pilsner.

3. House-Made Italian Sausage Pizza + an Amber Ale

We make our Italian sausage in-house.

That means we control the seasoning, the fennel, and the balance of flavors rather than opening a bag and hoping for the best.

Sausage brings richness and savory depth to a pizza, especially when it’s sitting on top of our scratch-made sauce and stone-baked crust.

This is where a good amber ale earns its keep.

Amber ales tend to have a little more malt character, with toasted, caramel-like flavors that complement browned sausage and the crust.

It’s a comfortable pairing. Nothing is fighting for attention.

And sometimes that’s exactly what you want.

The pairing: House-made Italian sausage pizza + amber ale.

4. A Classic Cheese Pizza + a Pale Ale

A great cheese pizza doesn’t need much help.

Good dough. Good sauce. Good cheese.

That’s it.

And because there’s nowhere to hide, it’s one of the hardest pizzas to get right.

A balanced pale ale makes a great companion.

The gentle hop bitterness can cut through the richness of the cheese, while citrus or floral notes add something interesting without taking over the entire meal.

You get the pizza. You get the beer.

Everybody wins.

The pairing: Classic cheese pizza + balanced pale ale.

5. Spicy Pizza + an IPA (If You Like Things Loud)

Let’s talk about IPAs.

They’re not always the obvious choice for spicy pizza, despite what some beer-pairing guides might tell you.

A big, bitter IPA can actually make chili heat feel hotter. Add higher alcohol content and things can get pretty intense.

But that doesn’t mean the combination can’t be delicious.

A citrus-forward IPA can work beautifully with bold pepperoni, savory sausage, and a little habanero hot honey—especially if you enjoy the heat rather than trying to escape it.

Think of it as turning up the volume.

Not everybody wants that.

We do, occasionally.

The pairing: Bold, spicy pizza + citrus-forward IPA for people who enjoy extra heat.

The Best Part? Our 20-Tap Self-Serve Beer Wall

Here’s where Fat Lip does things a little differently.

Instead of committing to one beer before you’ve even tasted your pizza, our self-serve beer wall gives you the opportunity to explore a rotating selection of craft beers.

You can try different styles, discover something local, and find out what works with your favorite pie.

Start with something crisp. Try something hoppy. Maybe finish with an amber.

The point isn’t to follow somebody else’s rules.

It’s to find what tastes good to you.

And because the tap selection rotates, there’s usually something different to discover the next time you visit.
